Cesanese di Olevano Romano is a distinctive red wine appellation from the Lazio region, centered on the historic hills of Olevano Romano and parts of Genazzano. The wine is primarily crafted from the indigenous Cesanese di Affile and Cesanese Comune grapes, which must constitute at least 85% of the blend. These varieties thrive in the area's unique volcanic and limestone-rich soils, benefiting from significant diurnal temperature shifts that promote slow, complete phenolic maturation. The resulting wines are noted for their ruby-red color, floral and dark fruit aromatics, and a structured, harmonious palate. The DOC covers a diverse range of styles, including dry, amabile, and sweet versions, as well as 'Superiore' and 'Riserva' designations that require longer aging and higher alcohol content. The production zone is located in the eastern part of the province of Rome, specifically covering the entire territory of Olevano Romano and a portion of the municipality of Genazzano. The vineyards are situated on the slopes of the Monti Simbruini at altitudes between 211 and 571 meters above sea level, characterized by volcanic soils and a temperate climate within the upper Sacco Valley.
