Est! Est!! Est!!! di Montefiascone is a historic white wine denomination from the Viterbo province in Lazio, famously linked to the 12th-century legend of a German prelate who was so enamored with the local wine that he inscribed 'Est!' (It is!) on the tavern doors. Produced primarily from Trebbiano Toscano (locally known as Procanico) and Trebbiano Giallo (Rossetto), the wine is crafted in a landscape of volcanic hills overlooking Lake Bolsena. The wines are typically straw-yellow, characterized by a fine, slightly aromatic bouquet and a palate that ranges from dry to semi-sweet, often displaying a distinctively sapid, harmonious profile with a subtle, pleasant bitterness on the finish. The denomination includes a 'Classico' sub-zone for the most traditional vineyards and a Spumante version, both benefiting from the unique mineral-rich volcanic soils and the moderating influence of the lake, which ensures slow, balanced grape maturation.
