The Colli Cimini IGT, established in 1995, covers a viticultural area in the province of Viterbo, Lazio. The production zone is defined by the volcanic soils and hilly landscapes surrounding the Cimini Mountains and the upper Tiber Valley. The disciplinare is highly permissive, allowing for a wide range of wine styles including white, red, rosato, frizzante, novello, passito, and late-harvest (vendemmia tardiva) wines. The production relies on traditional Lazio grape varieties, with specific regulations for varietal labeling requiring at least 85% of the stated grape. The region has a long history of viticulture dating back to the Etruscan era, characterized by a temperate climate and volcanic tuff soils that provide a distinct terroir. The disciplinare focuses on maintaining traditional cultivation and vinification practices while ensuring the chemical and organoleptic balance of the final products.
