Aleatico di Puglia is a specialized DOC dedicated to the Aleatico grape, a variety known for its aromatic profile and suitability for sweet wine production. The denomination covers the entire Puglia region, allowing for both 'Dolce Naturale' and 'Liquoroso' styles. These wines are characterized by a garnet-red color that shifts toward orange with age, offering a delicate, ethereal bouquet and a velvety, harmonious palate. The production process often involves a light drying of the grapes on the vine or on mats to concentrate sugars and flavors. With a minimum alcohol content of 13% for the base version and 16% for the fortified version, these wines reflect the warm, Mediterranean climate of Southern Italy. The regulation permits a small percentage of Negroamaro, Malvasia Nera, and Primitivo to round out the blend, ensuring the wine maintains its distinct regional identity while adhering to traditional viticultural practices.
