About the wine

The San Severo DOC, established in 1968, represents a historic viticultural area in the northern part of Puglia's Tavoliere plain. This region, deeply rooted in Daunian history and influenced by medieval monastic traditions, produces a diverse range of wines including whites, reds, rosés, and sparkling versions. The white wines are typically based on Bombino Bianco and Trebbiano, often noted for their freshness and harmony, while the reds rely heavily on Montepulciano, resulting in structured, tannic, and age-worthy wines. The terroir, characterized by clay-limestone soils and a warm, arid Mediterranean climate, provides an ideal environment for these varieties. The DOC is particularly recognized for its long-standing tradition of Bombino Bianco cultivation, which is said to have been introduced by the Knights Templar. The wines are generally characterized by their balanced acidity and distinct regional identity, reflecting the unique pedoclimatic conditions of the Alto Tavoliere.

Production & aging

The production area is located in the northern Tavoliere plain (Alto Tavoliere) in the province of Foggia. It encompasses the entire territories of the communes of San Severo, Torremaggiore, and San Paolo di Civitate, along with specific portions of Apricena, Lucera, Poggio Imperiale, and Lesina. The landscape is primarily flat with gentle slopes near the Sub-Apennines and the Gargano Promontory.
