About the wine

The Aversa DOC, established in 1993, is a unique appellation centered on the Asprinio grape, a variety historically celebrated for its high acidity and refreshing character. The region is defined by its distinctive 'alberata aversana'—a traditional training system where vines are 'married' to tall poplar trees, reaching heights of up to 20 meters. This practice, combined with the volcanic, pyroclastic soils of the plains north of Naples and Caserta, creates a wine of remarkable freshness and tension. The DOC covers both a still 'Asprinio' and a sparkling 'Asprinio spumante' version. The wines are typically pale yellow, dry, and intensely fruity, with a crisp, sharp profile that has historically made them a favorite for summer consumption and pairing with local cuisine like pizza. The production remains deeply tied to the cultural heritage of the Agro Aversano, where ancient tuff-hewn cellars are still used to maintain the cool temperatures necessary for the wine's natural effervescence and stability.
