Cacc'e mmitte di Lucera is a distinctive red wine from the Daunia area in northern Puglia. Its unusual name, derived from the local dialect, translates to 'take out and put in,' historically referring to the cellar operations of moving wine to make room for new must. The wine is a complex blend anchored by Uva di Troia (Sumarello), which provides the structural core, complemented by a mix of Montepulciano, Sangiovese, and Malvasia Nera, with a mandatory portion of white grapes like Trebbiano Toscano and Bombino Bianco. This specific composition results in a ruby-red wine that is dry, full-bodied, and harmonious, characterized by an intense, distinctive bouquet. The production is strictly limited to the communes of Lucera, Troia, and Biccari, where the clay-limestone soils and Mediterranean climate shape the wine's profile. The regulations emphasize traditional viticultural practices and prohibit the use of quality-related descriptors like 'Riserva' or 'Superiore' on labels, focusing instead on the authenticity of the vintage and the terroir.
