About the wine
Vin Santo del Chianti Classico is a prestigious Tuscan dessert wine produced through a traditional, time-intensive process. Grapes are carefully selected and subjected to natural drying (appassimento) until they reach a minimum sugar content of 27%. The wine is then fermented and aged in small wooden casks, known as caratelli, for at least 24 months. The resulting wine is characterized by an intense, ethereal bouquet and a complex palate ranging from dry to sweet, often featuring notes of toasted almond and dried fig. The 'Occhio di Pernice' version, dominated by Sangiovese, offers a distinct rose-gold to amber hue and a velvety, rounded profile. This DOC represents the pinnacle of Tuscan winemaking tradition, strictly regulated by the Chianti Classico consortium to ensure quality and authenticity.

The production zone encompasses the entire Chianti Classico territory, spanning 71,800 hectares across the provinces of Florence and Siena. It includes the full territories of Greve in Chianti, Castellina in Chianti, Radda in Chianti, and Gaiole in Chianti, as well as parts of San Casciano Val di Pesa, Poggibonsi, and Barberino Tavarnelle. The landscape is a hilly plateau characterized by calcareous-marly soils and schistous clays.
