About the wine
Vin Santo di Carmignano is a historic Tuscan dessert wine produced in the communes of Carmignano and Poggio a Caiano. Rooted in a tradition dating back to the 14th century, this DOC is defined by its meticulous production method: grapes are hand-selected and dried before fermentation, which occurs in small wooden 'caratelli' barrels. The standard Vin Santo is primarily composed of Trebbiano Toscano and Malvasia Bianca Lunga, resulting in a wine ranging from straw yellow to deep amber, with a velvety, harmonious profile that spans from dry to sweet. The rare 'Occhio di Pernice' variant is based on Sangiovese, yielding a distinctively pink-hued, structured wine. Both styles require significant aging, with the base wine released no earlier than the third year after harvest, and the Riserva in the fourth. These wines are celebrated for their intense, ethereal aromas and their versatility, pairing elegantly with local pastries, aged cheeses, or foie gras.

The production zone is strictly limited to the administrative territories of the communes of Carmignano and Poggio a Caiano, located in the province of Prato. The area is characterized by the Montalbano hills, featuring soils composed of marly limestone (alberese), clay shales, and sandstone, with vineyards situated at altitudes not exceeding 400 meters.
