Soave is one of Italy’s most historic and significant white wine denominations, centered on the volcanic hills east of Verona. The wine is defined by the Garganega grape, which provides structure, floral aromatics, and notes of stone fruit and almond. The DOC encompasses a diverse landscape, ranging from the classic volcanic soils of the 'Classico' zone—the original heart of the production area—to the broader 'Colli Scaligeri' sub-zone. These wines are typically crisp, elegant, and mineral-driven, often showing excellent aging potential despite their approachable nature. The regulation allows for a small percentage of Trebbiano di Soave and Chardonnay to complement the Garganega, ensuring a balance between aromatic complexity and acidity. Whether produced as a standard Soave, a Classico, or a sparkling spumante, the denomination represents a benchmark for Italian white viticulture, emphasizing the unique terroir of the Venetian hills.

The production zone is located in the province of Verona, covering the hilly and foothill areas of thirteen communes, including Soave, Monteforte d'Alpone, San Martino Buon Albergo, and Illasi. It features a distinct 'Classico' sub-zone in the communes of Soave and Monteforte, and the 'Colli Scaligeri' sub-zone, which encompasses the broader hilly terrain across the eastern Veronese landscape.
