Vin Santo del Chianti is a traditional Tuscan dessert wine produced through the appassimento method, where grapes are dried before fermentation. The wine is typically aged in small wooden barrels, known as caratelli, for an extended period, resulting in a complex, oxidative profile with notes of dried fruit, honey, and toasted nuts. The DOC allows for a standard version, primarily based on Trebbiano Toscano and Malvasia Bianca Lunga, and a specialized 'Occhio di Pernice' style, which is a rosé-hued dessert wine made predominantly from Sangiovese. The production area spans a vast portion of the Tuscan hills, excluding the specific Chianti Classico zone, and includes several recognized sub-zones such as Colli Senesi, Colli Fiorentini, and Rufina. It is a quintessential expression of Tuscan viticultural heritage, balancing sweetness with vibrant acidity.

The zone is strictly delimited by the ministerial regulation and explicitly excludes the territory designated for the production of Vin Santo del Chianti Classico.
