Vin Santo di Montepulciano is a prestigious Tuscan dessert wine produced in the hills surrounding the town of Montepulciano. This DOC is defined by its traditional 'appassimento' process, where grapes are dried on racks before pressing, followed by a long, slow fermentation and maturation in small wooden casks (caratelli) often kept in attics to benefit from seasonal temperature fluctuations. The base wine, crafted primarily from Malvasia Bianca, Grechetto, and Trebbiano Toscano, displays a golden-to-amber hue with intense aromas of ripe fruit and a velvety, rounded palate. The rare 'Occhio di Pernice' typology, based on Sangiovese (Prugnolo Gentile), offers a deeper, reddish-amber color and complex, persistent flavors. These wines are characterized by high alcohol content and significant aging requirements, reflecting a deep-rooted local tradition that balances historical winemaking techniques with modern quality standards.

The production area is strictly limited to the administrative territory of the commune of Montepulciano in the province of Siena. Vineyards must be situated on hillsides at altitudes between 250 and 600 meters above sea level, excluding the valley floors of the Valdichiana. The terrain is characterized by Pliocene marine sands and clays, providing a unique geological profile distinct from neighboring areas like Chianti Classico.
